The healthy energy drink
Evergreen tea, Camilia sinensis, originates from China. It has been known as a healing plant for thousands of years.
It was brought to Japan circa 800 years ago, and it is also said to be a life prolonging elixir.
Buddhist monks also use this energizing drink to enable them to meditate for longer.
PRODUCTION
The tea is made from the whole leaves of the plant. The plants are covered with black nets or bamboo mats to keep them in the shade. This helps to keep as many ingredients in the leaves as possible. It also improves taste an colour.
The tea leaves are cleaned with steam, dried and finally ground to powder.
PREPARATION
Boil water and let it cool down to 80 degrees.
Then put the powder in your cup and add the water.
Then use the traditional bamboo whisker to whisk the tea until it is foamy.
To refine it, add honey or milk.
FLAVOUR
The flavour is tart but mild and creamy,
intense, even fruity and nutty.
It is very aromatic. It can be added to many different dishes, like chocolate, ice cream and other desserts.
30 grams of tea cost 20 to 50 euros, but it is worth it. This tea is known for its bright green colour.
The brighter the colour, the fresher the tea.
FUN FACT
Since the 1600s, the Matcha tea has been a part of tea ceremonies. A well performed ceremony is a sign of intellect and a cultivated life style.
